  • 1 teaspoon 1 Kashmiri red chili powder

  • 1 teaspoon 1 Garam masala

  • 1 teaspoon 1 Sea salt

  • 2 cups 2 Hot water

  • 1 tablespoon 1 Kasuri methi (dried fenugreek leaves)

  • 1/3 cup 1/3 Heavy cream

  • 1 piece 1 Bay leaf

  • 2 pieces 2 Green cardamom

  • 1 piece 1 Black cardamom

Directions

  • Rinse urad dal and rajma thoroughly in multiple changes of water until water runs clear. Soak overnight in plenty of water.
  • Drain the soaked lentils completely and add to pressure cooker with 4 cups fresh water. Pressure cook for 10 whistles on medium heat.
  • Check that dal is completely soft and mashable with a spoon. If still firm, add more water and cook for 3-4 additional whistles.
  • Heat ghee in a heavy-bottomed pot over medium heat. Add bay leaf, green cardamom, and black cardamom. Let sizzle for 1 minute.
  • Add finely chopped onions to the pot and sauté for 7 minutes until golden brown, stirring frequently to prevent burning.
  • Stir in ginger garlic paste and cook for 1 minute until fragrant and the raw smell disappears completely.
  • Pour in tomato puree and cook for 3-4 minutes. Add salt, Kashmiri red chili powder, and garam masala.
  • Continue cooking the masala for 4-5 minutes until thick and oil begins to separate from the mixture.
